Ingredients
✓ 1 meaty ham bone or 2 cups diced cooked ham
✓ 8 cups low sodium chicken broth or water
✓ 1 cup dried navy beans or kidney beans
✓ 1 carrot, diced
✓ 1 celery stalk, diced
✓ 1 small onion, diced
✓ 1 bay leaf
✓ 1 teaspoon dried thyme
✓ Salt and pepper to taste
Instructions
✓ Rinse the beans and soak them for 1 hour or overnight.
✓ In a large pot, add the broth or water, ham bone or diced ham, and vegetables.
✓ Bring to a boil, then reduce heat and simmer for 90 minutes to 2 hours.
✓ Remove the ham bone and add the soaked beans.
✓ Continue simmering for another 45 minutes until beans are tender.
✓ Season with salt, pepper, bay leaf, and thyme.
✓ Remove bay leaf and serve hot.
Notes
This soup tastes even better the next day. Store in the refrigerator for up to 4 days or freeze for up to 3 months.
