Ingredients
✓ 8 ounces pasta
✓ 1 cup cherry tomatoes, halved
✓ 1 cup cucumber, diced
✓ 1 bell pepper, diced
✓ ½ cup red onion, diced
✓ 1 cup mozzarella cheese, cubed
✓ ½ cup olives
✓ ½ cup Italian dressing
✓ Salt and pepper to taste
✓ Fresh herbs for garnish
Instructions
✓ Cook the pasta according to the package instructions until it’s al dente, then set it aside to cool
✓ In a large pan, heat a couple of tablespoons of olive oil over medium heat and sauté the diced bell pepper and red onion until they’re tender and lightly browned
✓ Add the halved cherry tomatoes to the pan and cook for an additional 2-3 minutes, until they start to release their juices
✓ Stir in the diced cucumber and cook for another minute, allowing the flavors to meld together
✓ In a large bowl, combine the cooked pasta, sautéed vegetables, cubed mozzarella cheese, and sliced olives
✓ Pour the Italian dressing over the top and toss everything together until the pasta and vegetables are well coated
✓ Season with salt and pepper to taste, then garnish with fresh herbs
