Ingredients
✓ 1 cup long grain white rice
✓ 2 cups chicken broth or vegetable broth
✓ 1 cup tomato sauce or crushed tomatoes
✓ ½ teaspoon ground cumin
✓ ½ teaspoon chili powder
✓ ¼ teaspoon black pepper
✓ ½ teaspoon salt
Instructions
✓ In a medium saucepan, bring the broth to a boil and add rice. Stir once to coat the grains.
✓ Reduce heat to low, cover, and simmer for 15 minutes.
✓ Remove from heat, stir in tomato sauce and salt.
✓ Cover and let steam for 5 minutes.
✓ Serve hot, garnished with fresh cilantro or lime wedge.
Notes
For extra flavor, toast the spices in a dry pan for 30 seconds before adding to rice. Store leftovers in the fridge for up to 3 days.
