🥄 2 medium russet potatoes
🥄 1 cup shredded sharp cheddar cheese
🥄 2 green onions, chopped
🥄 1 cup full-fat sour cream
🥄 2 tablespoons butter
🥄 Salt and pepper to taste

Instructions
👨🍳 Preheat oven to 425°F
👨🍳 Wash and pierce potatoes all over with a fork
👨🍳 Bake for 45-50 minutes until fork-tender
👨🍳 Cool for 5 minutes then scoop out flesh into a bowl
👨🍳 Mash potato with butter and salt
👨🍳 Gradually stir in sour cream until smooth
👨🍳 Fold in cheese until melted and creamy
👨🍳 Top with green onions, chives, or jalapeños
👨🍳 Serve immediately in a warm bowl
