✓ 1½ pounds beef sirloin or stew beef, cut into bite-sized pieces

✓ 1 medium onion, chopped
✓ 3 cloves garlic, minced

✓ 2 cups beef broth
✓ 1 tablespoon Worcestershire sauce
✓ 1 tablespoon soy sauce
✓ 1 teaspoon dried thyme
✓ 1 teaspoon paprika
✓ 1 tablespoon butter

Instructions
✓ Pat beef dry and season generously with salt and pepper.
✓ Heat olive oil in a heavy-bottomed pot over high heat.
✓ Brown the beef in batches, about 3-4 minutes per batch.
✓ Remove beef and set aside. Add chopped onion and garlic to the pot.
✓ Cook until onions are soft and translucent, about 3 minutes.
✓ Sprinkle flour over the vegetables and stir for 1 minute.
✓ Pour in beef broth, Worcestershire sauce, and soy sauce.
✓ Add thyme, paprika, and return the beef to the pot.
✓ Bring to a boil, then reduce heat and simmer uncovered for 25-30 minutes.
✓ Stir in butter at the end for a glossy finish.
✓ Garnish with fresh parsley before serving.
