Ingredients
🥄 1 tablespoon Olive Oil or Cooking Spray
🥄 1 pound Italian Sausage
🥄 1 teaspoon Italian Seasoning
🥄 4 large Eggs
🥄 1 cup Full-Fat Milk
🥄 1 medium Onion
🥄 1 cup Red Bell Peppers
🥄 1 cup Fresh Spinach
🥄 2 cloves Garlic
🥄 1/2 cup Ricotta Cheese
🥄 1/2 cup Grated Parmesan Cheese
🥄 Salt to taste
🥄 Black Pepper to taste
Instructions
👨🍳 Preheat oven to 375°F and grease a 9×13-inch casserole dish
👨🍳 Cook sausage in a skillet until browned, about 8 minutes, then drain fat
👨🍳 Add onion, red bell peppers, garlic, and spinach to the skillet, cook for 3 minutes until spinach wilts
👨🍳 Stir in milk and eggs, whisking until combined
👨🍳 Combine sausage and vegetable mixture with ricotta, Parmesan, and seasonings
👨🍳 Pour mixture into prepared dish and spread evenly
👨🍳 Cover with foil and bake for 35 minutes
👨🍳 Remove foil and bake for 10-15 minutes until golden edges pull away from the pan
👨🍳 Cool for 5 minutes before slicing

Store in the fridge up to 3 days. Reheat individual portions in the microwave or bake at 350°F for 10-12 minutes.
