Ingredients
✓ 1 cup cherry tomatoes, halved
✓ 1/2 cup cucumber, diced
✓ 1/2 cup red onion, thinly sliced
✓ 1 cup kale, chopped
✓ 1/2 cup bell peppers (any color), diced

✓ 3 tablespoons extra virgin olive oil

Instructions
✓ Halve cherry tomatoes, dice cucumber, slice red onion thinly, chop kale finely, and dice bell peppers
✓ In a small bowl, whisk together olive oil and lemon juice
✓ Add salt and pepper to taste
✓ Combine all vegetables and crumbled feta in a large mixing bowl
✓ Pour dressing over vegetables and toss until evenly coated
✓ Serve immediately or store in the fridge for up to 2 hours
