✓ 14 pound whole turkey
✓ ⅓ cup kosher salt
✓ ½ cup unsalted butter (1 stick)
✓ 2 teaspoons smoked paprika

✓ 1 teaspoon onion powder
✓ 1 teaspoon black pepper
✓ ½ teaspoon dried basil
✓ ½ teaspoon dried thyme
✓ ½ teaspoon dried oregano
✓ ½ teaspoon celery salt
✓ ½ teaspoon cayenne pepper
✓ 2 tablespoons neutral oil
✓ ¼ cup strained drippings (or butter)
✓ ¼ cup flour
✓ Turkey stock or chicken stock as needed
✓ 1 clove garlic
✓ ¾ teaspoon smoked paprika
✓ ¼ teaspoon celery salt
✓ ¼ teaspoon onion powder
✓ ¼ teaspoon garlic powder
✓ ¼ teaspoon black pepper
✓ ⅛ teaspoon cayenne pepper
✓ Salt to taste
✓ 2 tablespoons butter
✓ 2 teaspoons parsley (finely chopped)
Instructions
✓ Remove backbone from turkey and lay flat.
✓ Mix spices and rub into turkey skin, making sure to get under the skin as well.
✓ Let seasoned turkey sit at room temperature for 30 minutes before cooking.
✓ Preheat oven to 425°F. Place on a roasting pan with neutral oil.
✓ Cook until internal temperature reaches 165°F in thickest part of meat, approximately 1 hour and 45 minutes.
✓ Remove from oven and let rest 15-30 minutes before carving.
