Ingredients

✓ 3 medium potatoes (about 1.5 lbs)
✓ 1 medium onion, diced
✓ 2 cloves garlic, minced
✓ 1/2 cup diced bell pepper
✓ 1 tablespoon Cajun seasoning
✓ salt and pepper to taste
✓ optional 1/2 cup shredded cheddar
✓ optional 1/2 cup cooked sausage
✓ optional 1 cup cooked chicken
Instructions
✓ Sauté onion, bell pepper, and garlic in butter until translucent
✓ Add potatoes and Cajun seasoning, cooking for 2 minutes
✓ Pour in broth, bring to a boil, then simmer until potatoes are tender
✓ Blend half of the soup for a smoother texture, then stir back in
✓ Stir in cream and smoked paprika, season with salt and pepper
✓ Serve hot, topped with optional cheddar or sausage if desired
