🥄 ½ teaspoon red chili flakes, optional
🥄 ¼ cup grated Parmesan cheese, optional
Instructions
👨🍳 Preheat your oven to 375°F (190°C).
👨🍳 Slice the eggplant into ½-inch thick rounds and lightly salt them to draw out excess moisture.
👨🍳 Heat olive oil in a skillet over medium heat and fry the eggplant slices until golden and tender.
👨🍳 Layer the fried eggplant in a baking dish, adding tomato sauce and seasonings between each layer.
👨🍳 Top with grated Parmesan cheese if desired.
👨🍳 Bake for 25–30 minutes until the sauce is bubbling and the cheese is golden.
👨🍳 Let cool for 5 minutes before serving.
